Today we are talking about light recipes, quick and delicious, and perfect to propose to your loved ones if you are on a diet but do not want to give up taste and imagination.

Dieting does not necessarily mean eating sad and tasteless dishes! With our ideas, on the contrary, you can organize a light dinner with your family… without saying anything! The recipes will be so tasty that no one will wonder whether they are dietetic or not!

First courses, second courses, main courses and desserts: today there’s room for a bit of everything, and with a little creativity, you can even create a complete menu. What do you say, have we convinced you? Let’s take our favorite spatula and cook together these 5 light and delicious recipes!

1. Vegan paella

Let’s start right away with one of the best light vegetarian recipes out there: veg paella! This typical dish of Spanish tradition, or rather, Valencian, can be prepared in many variations, using meat, fish or both.

Today, however, we propose it in a 100% veg and super light version! Try it, and you’ll see: everyone will love it!

Ingredients for the vegetable paella

  • 360 g of paella rice;
  • 2 red peppers;
  • 100 g of mushrooms;
  • 1 eggplant;
  • 1 onion;
  • 1/2 cup of peas;
  • green olives to taste;
  • cherry tomatoes to taste;
  • natural tofu to taste;
  • salt and spices to taste;
  • 2 tablespoons of tomato paste;
  • 1 l of vegetable broth;

2. Vegetable creams

The vegetable creams, if made with love, are an ideal dish to gather the family around the table in the evening: they are light, but at the same time can give very pleasant notes to the palate! Below we propose three different creams according to the season, but all of them can also be prepared with frozen vegetables.

First of all, we chose pumpkin velouté because we love its flavor, its color and its versatility, and that’s why we combined it with some spices, to give the dish an extra kick.

And if it’s not pumpkin…you can try it with mushrooms! Preparing a mixed mushroom soup is a great way to bring to the table a warm dish, inviting and at the same time light: the ingredients, besides the main characters, are mostly vegetables and herbs. So, what are you waiting for? Try this amazing soup!

And for a more summer/spring variant, we propose the velvety pea soup, delicate but really enveloping! Everything is completed by a heart of ricotta cheese and croutons that can make it a healthy and light dish.

3. Vegetable spaghetti

Looking for healthy recipes, but at the same time colorful, fun and delicious? Then you must try vegetable spaghetti! These noodles are not a real recipe, but more a preparation that can change depending on the vegetables we use. The important thing is that you choose hard-fleshed foods, then pass them through the spiralizer and that’s it!

You can use zucchini, carrots, cucumbers, potatoes, beets… just keep in mind that some vegetables will have to be cooked, while others will be fine even raw!

And for the sauce? Well, indulge yourself! This “pasta without pasta” will win you over for its originality!

4. Light eggplant parmigiana

How about a light eggplant parmigiana, but still a 10 with honors? This traditional Italian recipe really appeals to everyone, and it’s one of those rich dishes that bring the family together around the table.

However, let’s say that it is not a recipe famous for its lightness! That’s why we thought of proposing you one… in a light version! Eggplant and tomatoes remain as in the original parmigiana, but the cheese is removed, making it all more digestible!

You too can try it: the family diet has never been so delicious!

Ingredients for the light parmigiana

  • 2 eggplants ripe red tomatoes;
  • breadcrumbs;
  • fresh basil;
  • extra virgin olive oil;
  • salt.

5. Baked sea bass

Baked sea bass is really tasty, and is an excellent second course for adults and children alike. You can also use fruits for this recipe. It is easily accompanied by all types of vegetables and can be baked directly with potatoes, but also with a mixture of vegetables (carrots, onions, spring onions or others).

Capers, aromatic herbs, garlic and white wine make it tasty: very simple and quick cooking, for a really refined dish!

Ingredients for baked sea bass

  • 4 sea basses;
  • 5 capers Sage to taste;
  • Basil to taste;
  • Parsley to taste;
  • Olive oil to taste;
  • 3 cloves of garlic;
  • Salt to taste;
  • 1 pinch of black pepper;
  • half a glass of white wine.
